Saint Peter’s - A new restaurant named in honour of the patron saint of fishermen has opened in the CBD with a charter to serve only sustainable produce. Maurice Esposito has joined with Mariano Massaro to open St Peter’s and showcase line-caught fish from healthy population sourced from across Australia and New Zealand. Catch of the day might be hand-jigged Tassie calamari with wild mushrooms, rock flathead and a reduction of fortified Tuscan Vin Santo. A squid couldn’t ask for a more delicous – or sustainable – send off.
